How to control the temperature of your Weber
Open the vent to make your braai hotter. Close it to make your braai cooler. It's that simple.
If you're roasting something delicious in your Weber you’re going to want to control the temperature, but how? Most people think that the more charcoal you add the hotter the braai will become but the real answer lies in the air.
Most Webers have two vents - a top vent on the lid and and a bottom vent on the bottom bowl. I usually always leave the bottom vent fully open and use the top vent on the lid to control the temperature of my Weber braai. Open the vent to make your braai hotter. Close it to make your braai cooler. It's that simple.
Lots of different factors can affect the temperature of the Weber braai. How warm (or cold) it is outside, how windy it is, how clean (or dirty) your grill is and what you are cooking can all impact the temperature of your braai. That said here is a guide to setting your top vent to achieve different temperatures in your Weber braai.
High heat - 220-250°C - fully open
Medium heat - 180-220°C - ½ open
Low heat - 120-180°C - ¼ open
Low and slow - 100-140°C - ¼ to ⅛ open
Off - fully closed
