Boerewors Burger

It took 40 years to discover the tastiest burger in the world and the answer was under my nose!

This is an extraordinary burger with an extraordinary taste. I'd never imagined how good boerewors in a burger could be, until now. Once you try this you'll hesitate before going back to a standard burger patty. I must confess I've not yet tried to make the boerewors burger patties myself. I have a friend who makes amazing boerewors and he introduced me to this version in a burger patty. Now my freezer is always stocked with a stash of them. This is such a simple recipe to make - you'll be sitting down to eat within 30 minutes of lighting your fire. boerewors /ˈbuːrəˌvɔːs,ˈbʊrəˌvɔːs/ noun a type of traditional sausage, typically containing coarsely ground beef and pork seasoned with spices.

Ingredients


  • 4 boerewors burger patties

  • washed gem lettuce leaves

  • 2 sliced tomatoes

  • 4 sliced pickled cucumbers

  • 4 brioche burger buns

  • 1 red pepper

  • harissa paste


The Braai things


  • A Braai to cook on

  • 15 charcoal briquettes (the compact kind)

  • 4 firelighters


Watch the buns carefully because they can burn very quickly.

Method


All you need to do for this recipe is arrange the firelighters in the centre of the Braai and loosely pack the charcoal on top of them, then light your Braai. Your fire will be ready to cook on about 20 mins after lighting it. Once the the briquettes have fully turned white spread them out and put the grill in place to heat up. The Braai is ready to cook on once you‘re able to hold your hand over the coals without flinching for 5-7 quick seconds (the Braai readiness test).


First of all cook the whole red pepper over direct heat. The pepper is ready once is starts to soften - it's fine if it's slightly charred. Take the roasted pepper off the Braai, deseed and slice it and set aside with the other garnishes.

Now it's time to cook the Burger patties. I cook them over direct heat, 4-5 minutes each side until medium. Remove the burger patties and rest. While resting the patties, slice your brioche buns in half and lightly toast them face down on the grill. Watch the buns carefully because they can burn very quickly.


Remove the buns and assemble your Boerewors burgers with the patties, sliced tomato, pickled cucumber, lettuce, roasted red pepper and harissa. I use a toothpick to hold it all together on the plate. Serve with a side of salt and vinegar crisps.


There you go. So simple and trust me, so delicious. Worth waiting half a lifetime for!
